Iced Plum Gin
A rather delicious iced drink for summer evenings.
Make a Plum Granita using the recipe below, spoon it into shot glasses and top with a generous glug of Slamseys Plum Gin.
Put 500g fresh plums into a pan with 140g sugar, 500ml water and a vanilla pod that’s been split in two.
Simmer gently until the plums are soft and then remove the vanilla pod and push the plums and liquid through a sieve to remove the stones.
Pour the plum mixture into a plastic container and put in the freezer. After about an hour, use a fork to pull the frozen edges into the centre. Repeat this every hour until the mixture looks like crushed ice (rather than a frozen solid lump).
