Rhubarb with Strawberry Gin

Rhubarb with Strawberry Gin

For a light, summery pudding this dish is a winner as rhubarb and strawberry marry well together.

750g rhubarb cut into short lengths

100g caster sugar

120ml of Slamseys Strawberry Gin

Toss the rhubarb and sugar together in an ovenproof glass dish and pour over the Strawberry Gin.

Cook in a hot oven (220C) for 15 minutes. If your rhubarb is thick stemmed you many need another five to to ten minutes.

Eat warm or cold.
